Brian O'Halloran's late point put Kildalkey on the road to victory at Páirc Tailteann.
Level at 0-15 each in the closing stages, O'Halloran landed a critical score for Kidalkey, who finished strongly.
At the interval Ratoath led by 0-10 to 0-7, but just before the break Daithí McGowan was sent off.
It was tight and tense after the restart, but Kildalkey delivered in style late on to earn a seventh Meath SHC title.
Nicky Potterton and O'Halloran contributed vital scores for the victors, who earned a second championship in three years.
